I have had it well over 10 years and I keep having that flaking, crusty junk falling on my q!! I know it is a build up of smoke and grease or whatever but what do yall do to keep it in check? The lid is the worst because it is above the food! I am always in a hurry to eat when I am done smoking..

.... It is way past time for a major cleaning of ALL my webers! Any tips would be appreciated..

I don't mean to highjack your thread, but a related question: I just cleaned the ashes out of my WSM from a superbowl cook and I noticed that some of the ashes were stuck. I assume some moisture dropped down from the food and caused the ash to gunk up.

I tried scrubbing it with a nylon brush for scrubbing pans and it didn't work very well.

Any other ideas?

Ball up some tin foil and rub it all over the inside of the lid. Anything that doesn't come loose from that won't likely fall on your food during cooks.

A brass brush, wadded up tin foil, or plastic putty knives all come in handy when scraping the inside of the wsm, and as long as you use water in the pan, you need to clean the inside of the dome a bit before any cook, especially long ones.

I use an unbent one to scrape down the insides of the center section every now and then too.
Oh, and +1 on the tin foil ball for the dome flakiness.

I think the Weber manual says not to but I clean mine about once a year with an over cleaner. Just spray it on and let it sit for 5 or 10 minutes and then scrub off with a non abrasive. I use a Scotch-Brite 3M Non-Scratch Scrub Sponge.

Oddly enough the manual I found online for my old stainless steel performer says to use an oven cleaner.
