BrianZ I recently went with the clay saucer mod myself, a few cooks in now and so far its been wonderful, love the clean up. Anyway, today I bought a 17lb packer brisket from the local locker. Ibp usda choice, will only be my second time doing a brisket. Also a 7lb butt, also trying the 2 hr brats and 1hr hot dogs

I wasnt home last weekend so I missed out on a weekend

Ill have to make up for it this weekend I guess

Think I may have to invite a few people...hmm....
