What do you do with your rib tips?

This weekend I did 4 racks of spares which I trimmed St. Louis style, which left me with a lot of rib tips.

This time, I didn't put rub on them, just salt and pepper. I smoked them for 7 hours or so until the racks were done then took them off.

I'm going to freeze them and use them as I would a ham hock for my next pot of beans.

What do y'all do with them?

1. If I don't have any leftover ribs (which is pretty much always), I'll just eat 'em like I do ribs. 45mins in a foil pouch in a 300 degree oven with some sauce.

2. Just now finished a breakfast scramble with rib tip meat, eggs, cheddar cheese and a little bbq sauce.

3. Pot o' beans or soup.

4. Tacos, burritos, enchiladas, etc. (this is work, though, to get all the meat off sometimes....)

I'm sure there are many more uses. Any recipe you got that calls for ham hock. They are especially good for munching on while you watch a whole pig roasting in a pit in your lawn.

I agree with the soup beans! You can make a sammich out of ANTYTHING /infopop/emoticons/icon_biggrin.gif
