What do you do with the small ribs from the rack?


 
I Cut them off when prepping /after seasoning the whole rack.
Throw me on with the ribs
that there is a chef snack.

And I use them to judge seasoning
before wrapping
Especially when I’ve done different rubs or am debating sauces
