 OK I have spent some time reading, and will still spend more time reading, like forever!
OK my daughter is making her Confirmation next weekend and ironically my smoker will be here tomorrow.
Now my family and friends so look forward to my cooking (I am the cook in the house) I was planning on doing a turkey on my performer, do you think I can smoke it and not screw it up on the WSM for plan A
Or plan B do the turkey on the performer and something else on the WSM (can never have enough food!) I also do some awesum baby backs on the performer.
So point me to an easy smoke, pork butt, chicken, turkey, ribs,.....I'm so scared!
This is a science! and you are my professor's I'm all ears!
Thanks!

I went pork butt and whole chickens for my first cook. Butt is very forgiving to any flux in temp. The chicken honestly turned out better than any I had done before. I went with water in the pan and put a couple of piece of apple and cherry wood per hour. I wanted to keep the smoke taste light until I figured it out. I kept the temps around 225. Turkey is next on the list and it will be a high temp cook(325 F). The performer would be perfect for that. Good luck.

I did last thanksgivings turkey on the performer and it was the best ever. Even the turkey my wife defrosted a few months ago was grate. I will try a turkey on the new WSM before next Thanksgiving. Am doing my first cook on the WSM right now with just two whole chickens. On beer can style (with ginger ale) and the other with lemon and apple slices and garlic cloves in the cavity. From everything I have read, the WSM is a forgiving medium. You will do great. Maybe you should try a couple of pork butts and pull for sandwiches or taco's? A little something different for everybody. Good Luck

Ahhh I'm reading...... ok so once I put the butt in the cooler I can do the chicken...... See I'm not as toupid as I look!

My first cook was ribs, but I think a pork butt is better for a crowd...............who doesn't love pulled pork sandwiches...........d

PORK BUTT =) someone like you should have no problem with that.
Let as know how it went.

Well since I returned my 18.5 and I'm still waiting for the 22.5 to get here I did a 13 lb turkey on my trusty Performer for my daughters confirmation Sunday. We had great weather mid 70's Put the bird on at 1pm. Covered the side's with foil and threw on some more coals and left for church at 1:45. The Bishop was long winded and I did not get back home until 3:30. Coals were low but still there, stuck the bird and it read 170* added some more coals. 20 min later had my desired 180*. Took off bird and wrapped it in foil for 15 minutes.
Bird was oiled, salt and pepper, stuffed with orange half's and sage.
