Never have 'qued bison, but have cooked it.
The meat is very lean, so drying it out will be a real problem. Depending on the age of the animal, etc., it may be quite chewy unless cooked long and slow like brisket. The problem is bison doesn't have anywhere near the fat
You might try smoking it for a couple of hours then foiling it with some added bacon fat or bacon strips to finish the cook.
