What a pinhead

Still a newbie, so did another rack of ribs just so that I can master that cut of meat. There I was thinking I had everything honed in this time, like a hotshot.

Using the 3-2-1 method, & everything is going smoothly. After the 2hrs of foil (yes, I know that's waaaay too much for some of you) I pull the ribs to cook for the last hour. Wouldn't you know that when I put the cover back on the WSM in the dark I accidentally pin the pit probe for the DigiQ II on the outside of the cooker. Naturally I didn't notice until 45 mins. later when I looked outside and noted, in complete dismay, that my pit temp was 80 degrees. Yep, so I take a look & sure enough the blower has been on full blast for that 45 mins. & I killed the ribs.

Learned the hard way... guess that's what happens when trying to smoke ribs half in the bag.
