Wet Aging Brisket

Picking up 2 cases of CAB briskets next week. These will be used for competitions during the next couple of months. We want to wet age in cryovac. The question is - should we age first and then freeze what will be used later or freeze first and age after we thaw?

I always wet age first, but I've been told it does not matter. You can do it either way.

Wet age and freeze Dan. I take them out 7 or 8 days before a contest then. So they have nice and long defrost period in the fridge.
