Weber Summit Charcoal Grilling Center First Cook

I did my first cook on my new WSCG Center. It was a 9.06lb Pork Butt. I used 5ish charcoal buckets anticipating 20hr something cook compared to my Kamado Joe. WRONG I took it off after16hrs at 196-197 degrees.. Then wrapped it in three layers of heavy duty tinfoil and wrapped it in 4 towels and put into the cooler to insulated it until we were ready to eat. Since it finished way early. Lessons learned/consider:
- 9 minutes way too long for a low n slow cook.
- charcoal arrangement for low and slow- minion or spread the hot coals all over the fuel grate as weber says?
- 4 buckets would have been plenty of charcoal.
- When I went to bed after 7hrs I should have used the cleaning system to clean the ashes. The dome temp dropped at 3:30AM to 210. Maverick grill probe said 244 degrees.
- Lid temperature differed by as much as 40 degrees. I had tested the lid thermometer at 210 degrees in boing water. The Maverick was 212 degrees. So they are both accurate.
***The lid was higher 14 times-- Maverick higher 2 times and equal 2 times

That's the nice thing about the Summit, easy to clean the ash out, as opposed to the WSM.
 
That pork looks great! However, it looks a little smal as compared to the real estate, need to cook more meat! :coolkettle:
