How accurate have the thermos that come with the kettle grills? Am I going to have to use a remote thermo with a grate temp probe?

I don't really trust them but with some experience, you can use it. On that note, many of us do use remote devices to track temps of both pit temp and meat temp. Really just depends on what works for you. A kettle is great to use with or without a remote temp device. Enjoy your kettle and welcome to the forum.

The temp at the grate will be different than the temp of the lid, but I still look at the lid temp as a reference.

it is for reference only need moves it must be hot. the rest is by feel of the coals.

Welcome to the forum. I never look at my lid thermos I use a maverick for grate temps and food temps. The lid thermos are well known to be inaccurate.
