What if any thing do you do with the dripping that collect in you water smoker. They look to good to just throw away.

You can make gravy from turkey drippings in an empty, foil-lined water pan. You might be able to do that with drippings from a beef roast, but I've not tried it.

You can also do stuff with the water/drippings in the water pan. See these interesting posts:
