All,
I had ordered the Brinkmann water pan as an upgrade for my WSM but the circumference was smaller than the original WSM water pan. So, in a pinch this past weekend, I palced the bottom grate on top of the charcoal ring. I then just placed the water pan on top of the grate. It was an easy fix to use a larger pan. It was more difficult to add coals (had to take the WSM apart) but was effective. I had read on here that I should have gotten the Brinkmann Charcoal Pan...is that the case or do I need to modify the brackets on the WSM?
Anyways, I've only made pulled pork twice before on my Weber Performer and with not great success...but this time with the WSM it was unbelievable.
