I have an 18.5 WSM. THe water pan is huge, is it possible to replace it with a smaller pan thus increasing the amount of coals you could use.
 
You lost me. With the water pan sitting on the water pan tabs that are right under the lower cooking grate, how would using a smaller pan allow you too use more coals? You are not piling the coals the whole way up to the bottom of the charcoal pan are you? man if you are, you'd get like a 24-26 hr burn out of that many coals and I see no reason for any more. Cornfused here at what you want.

I was being kind j as he's a newbie. He prob doesn't know what we're talking about as that was pretty long ago.

You are new here, how did you hear about it?
 
Are you sure that you are installing the water pan in the corect position? I think you should have well over 6 inches from the bottom of the pan to the top of the charcoal ring. Vince
 
I think he must have the 2009 WSM as I do. The new water pan is much deeper than the older model. If you try to fill the charcoal ring past the top of the ring, it will come into contact with the bottom of the pan when assembled. I just fill mine level to the top and use a Minion start, which still gives many hours of burn time. You just need to avoid the "heaping" mounds of charcoal with this new pan.
 
I have an old school wsm so my advise might not apply here. I ususally only fill to the top of the ring. Never thought of filling past the ring. Question can the larger pan for the new models be used in the older units?
 
I have a 2009 18.5". The water pan does indeed get veeeery close to the charcoal ring. Sometimes on an overnight minion cook the ring will be full, including a few lit and wood chunks on the top, and i have to arrange the charcoal in a bowl shape to keep the water pan from resting on top of the fuel (mainly the chunks of wood). Foiling the pan exacerbates the problem.

I've considered adding removable shims to the water pan "shelf" to raise the its height, as I rarely use the bottom grate.
