Wally World prepackaged boston butts


 
Does anybody use these. Did not get the brand name but they are packaged off site and look ok. The only thing that concerns me is there is alot of blood in the package. The butts I have been getting from Publix are packaged at the store and have a minimal amount of blood with them. Unfortunately Publix around here don't get them much above 5lbs and I wish to push the envelope with my SJS smoker this weekend.
 
I've used both the butts and picnic cuts and they have been fine. I also agree that the butts are bigger than what you find at the other stores.
 
Ditto to most above, I get the from WalMart the majority of the time and they are just fine. Recently did a larger cook and went to a butcher and got 6 not enhanced and I could tell a little difference.
 
I wonder whether the Wally World butts were previously frozen. I usually get my barbecuing cuts from C-Co, and they look nice and dry in the cryo packaging. But if I have to freeze them and then thaw them in the fridge, I notice a lot of blood in the package and a little shrinkage of the meat. However, this hasn't affected the flavor or cooking properties at all, as far as I can tell.

Depends on what you consider "frozen". I believe the USDA defines it as 0ºF. Anything above that, even though it's covered in ice, can be called "Fresh, Not Frozen".

I would be surprized if large outlets like WalMart didn't receive meats stored below 32º.
 
I'm not sure how your wally world is but around here all their pork is enhanced, may or may not matter to you..

just a thought.

Hey Brian,
You can order any size butt from Publix. Just ask the butcher to order it in for you. They do for me in the Parrish store. I have a great relationship with the butchers there. They cut all my steaks fresh due to my liking a thicker steak than what's usually on the shelf.

Publix doesn't "Get in" 5 lb butts. They slice pork steaks off of the front of them. This lets them sell a pork steak at a higher price and reduces the size of the butt so it is cheaper.


All you have to do is ask a meat cutter (notice I didn't say "butcher") to see if they have any whole butts in the cooler. The only problem with that is you're going to pay +$2.50/lb for a butt that many are paying $1.25 or so per pound elsewhere. As good as Publix is, I don't buy a lot of meat there. It's either Costco or Restaurant Depot or another grocer that is less expensive (not Kroger, I won't buy a candy bar there).

My Wal-Marts Butts are always enhanced so I get my Butts at Costco. Here in Nor Cal they use Swift and I have been very happy with it.
 
Well I got a 7.62 boston butt from Wallys. It is made by Smithfield, says all natural and contains no artificial ingredients and no more than minimally processed. Its USDA process verified. Can't see anywhere where it says enhanced, if it comes out with a odd taste I'll just drown it in BBQ sauce.

Smithfield would definetly list them as enhanced if they were. They also might say "xx% solution of..." where they would list the enhancing ingredients.
 
So last night I really looked into the pork section at WW. It seems smithfield has 2 products for butts and ribs, "Self Basting" and "Natural".

The butts Brian got were the Natural ones, but they also have the self basting which contains a 12% solution of brining/flavoring ingredients. My local WW had both butts, all natural and self basting.
 
I rinse all meats with white vinegar before cooking. It gets all the blood and yucky stuff off the meat. Then rinse with water and pat dry
