I'm looking for some wood and since I live in an area with all kinds of fruit wood, have a question or two.

Should I been looking for seasoned or green wood?

Is it worth taking the bark off the wood?

Thanks,

Bob

You can use green or seasoned. Some folks have preferences but just start with something and find out what tweaks your taste buds. Some people remove bark. I don't.

Thanks Lew, my WSM is on the truck for delivery today. Been scouting around for wood I can get lots of almond so will start with that.

green fruitwood works fine.
If these are "cultured" trees that have been sprayed with any kind of 'icide, I would peel bark.
In my opinion uunseasoned hardwoods, oak, hickory pecan and the like come off a little bitter smelling.

Hi Bob, While some members are Ok with using green wood, I would not. Green wood has a lot of moisture and sap content which when burnt, will produce creosote leaving your meat tasting bitter. Sticking to the dry stuff will IMO give better results. Its still ok to buy the green stuff. Just let it dry a little while.

Thanks guys, I have a friend who has an almond orchard and he has offered some to me.

My smoker came yesterday and I put it together this afternoon. Looking forward to my first smoke.
