Vacation cooking

I've been traveling the east coast for the last week,visiting friends and family and going to my sisters wedding,so I haven't been cooking as much as I would like.

But while in New Jersey visiting friends,I was able to use my friends new Summit S 420. SWEET! That beauty has a TON of BTUs! Cooked up some veggies and chicken in no time what so ever! I officially have grill envy.

We spent 3 days at my nieces house,eating lobstah every chance we got and doing some site seeing. We came out to my nephews house today and am making up for lost time! I have an 8 pound flat and three racks of spares on my nephews brinkman offset. They've been on a couple hours and should be done about 7. I have a picture of the meat on the smoker,and will get them posted later!
 
That really looks good Phil. I suspected that you could cook on anything that was available. Great vacation story.

Here is a shot of the final product! The brisket was pretty good,but I think ribs could have gone another hour. Not too bad over all,but I'll take my WSM any day!
