Probe it, if the probe goes in with ease, it's done. More than likely it's done at that temp. If it is done and you're not planning on eating until later, I would wrap in foil and let rest on the counter for an hour. Then open the foil and let cool for 20-30 minutes, then slice. The assemble the slices back together into a pan just big enough to fit the meat into, then pour all of the foil juices on top of the slices, foil the pan and refridgerate. Reheat in a 325º oven until just warmed thorugh.
