tweaked wsm fit somewhat

I've always had a slight prob.on my wsm as far as totally round circumferences thus possibly allowing an air leak. I did what the site says about measuring and the mid section towards the bottom was off a little. I gently rolled it and pressed it into shape "tweaked it somewhat". The small adjustment has made a differnce and thanks to a member Shaun S for the idea. Yes, my wife looked at me funny when I had a tape measure and reading glasses,a beer, etc doing this! She probably thinks I'm about ready to screw up a 200 dollar smoker and I shouldn't have to do this! My two beer can chickens came out wonderful tonight- cooked over lump for the 1st time and had no probs for a chicken smoke. I carved up chickens with elec knife then put the carcasses in a pot of boiling water along with some skin ect. in order to make a smoky flavored chicken stock- can later be used as a base for a chicken stew or soup. Smoked chicken or turkey bones and carcasses are a no-no to simply throw away as they produce a good broth. You can actually just take the broth and bring to a boil and add some canned bisquit pieces into in order to make a pot of chicken and dumplings or use the stock to make a Louisiana type gumbo as long as you know how to make a good roux! As far as I can say, My wsm is cooking good and seems to be tweaked now- rolling into perfect circumference just takes a gentle manipulaton by the way- don't force it.
 
doug, congrads on the roll-fit of your WSM. And yes those Beer Can Carcasas make for a fine broth.

We use lots of leftovers from the smoke. I usually wind up with a real good pot of Brunswick stew made from any ribs or butt that is left. The stew has actualy become one of the benifits of a good smoke that my youngest son looks forward too.

Never tried making gumbo but after reading your post I think next smoke I will have to try it. Gonna break out the chicken stands sometime this week.

thanks Joe, a brunswick stew sure sounds wonderful as haven't had in awhile nor know how to make-I'll have to look up a recipe. That's a major benefit of smoking is that it allows you to be frugle and create other tasty dishes. I like to use leftover smoked chicken for chicken salad as make yummy sandwiches later.
