Turkey without the Wood in WSM

Hey,
I actually have a few relatives coming to Thanksgiving that do not like the taste of smoked meat (I know...I know).

How about a few chunks of lump throw on the Kingsford in the WSM and no wood and just simply roast the turkey?

Was thinking about no water in the bowl (it will be foiled) for a higher temp (want that crisp skin).

Any ideas, comments or experiences anybody willing to share with this approach?

Sure, that will work just fine. Take away the smoke wood, run the cooker hot without water, and you'll end up with a good result.

Why not just cook with lump, it runs warm, that's ok and there would be a very small amount of smoke flavor.

For my friends who don't like smoke flavor, I got thisi really cool device called an oven. Definately no smoke flavor there! /infopop/emoticons/icon_wink.gif

Mesquite lump may still be a little strong, flavor wise. So if that's all you can get, and your guest's smoke tolerance is really low, then mix the lump with Kingsford.

And run it hot. The skin will still be crispy and great looking.
