Turkey Skin


 
last year was my first year brining/smoking a turkey on WSM-results were OFF the charts. Turkey skin seemed a little darker than I would have preferred. Any suggestions/recommendations to keep skin from getting too dark from smoking.
 
Thank you for the awesome suggestion regarding the cheesecloth. My turkey came out of the WSM looking like a work of art. I will cheesecloth every time. Perfect suggestion!
