Apple/Cherry wood. Let it ride no water from 350-380 until 160 IT. Breast. Great flavor n moist.

Great lookin plate! Don't know how you managed to get your wsm to 350-380° I was barely able to keep mine at 300° I used two full lit chimneys. Very hot at first but then died down to 300.

Had all vents opened. Full grate of new KB with 4 large chunks of wood. Measured @ grate with igrill probe...even hit 400 every once in awhile. My ET732 grate probe wouldn't register...food probe on 732 worked.
