I followed the following recipe, http://www.virtualweberbullet.com/turkey5.html , but I put in a whole bunch of apple wood and cherry wood and cooked it at 220 for about 6 hours until it hit 160 degrees. The only thing I did that wasn't in the above recipe was put a can of beer with about 2 T of garlic in the cavity upright during the cook.
Pretty much, it was awesome... tasted great, was super juicy. I would have to say, "Cook everything slow and low!".
