1. I'm not sure a "whole sirloin" is the entire primal. Anyone know what I'd get at a wholesale (restaurant supply) type store?
2. Will most cryovac'd whole sirloins have the tri-tip? If yes, is it readily apparent how or where I cut it off? I want to cook them separately.
