Any good recipes for a tri-tip? Would prefer not to use slow cook method as described on this site. Would rather use high heat, searing etc. Is the WSM good for that kind of grilling and if so how? Would it be better to use my Weber Kettle? I am cooking just about everything on the WSM and my wife said she wants something without the "smokey" taste.
Thanks for your input now and in the past!

Use the Webber Kettle, grill it so it is still pink in middle, you can marinate it in something you like or we use Jack Daniels grill sauce, yum! Approx 45 minutes depending on your fire.

We also slow cook these babies on our mobile for 4-5 hours. Put them on at same time as our bbacks. We have gotten rave reviews from our guests cooking them this way.

Classic Santa Maria Tri Tip is Salt, Pepper and Garlic Salt. No trimming of the fat cap. Sear the non fat cap side for 5-10 minutes on a grill then cook direct on the fat cap till an internal of 130-140.

I prefer fresh garlic, kosher salt and fresh ground pepper. Trim the fat cap and grill with lump until you have 130-140 and a nice charred crust.

Some folks like Paprika and Parsley in the rub. Juju's Dad took 1st place using his normal rub at the Paul Kirk Grilling class and my fresh garlic was 3rd.

This is something I will be cooking a lot more often /infopop/emoticons/icon_biggrin.gif

LarryE....

Another option is to use your WSM but leave out any wood. That is how I prepare chicken and turkey.

I have also gotten away from using smoking wood when making my jerky.

Works fine and tastes great!
