Tri Tip @ Road HHouse Grill

Saturday the family went out to dinner to a restaurant called “Original Roadhouse Grill”.

I had the tri tip steak. It was more like a chunk of roast not a steak. Any who, this tri tip was so tender it was incredible. It had a texture of maybe a good pot roast. Maybe to tender. This is what they say on their menu:

Original Roadhouse Grill Bourbon Tri-Tip (10 oz)
A hearty steak marinated in our bourbon glaze and slow roasted overnight to
tender perfection.

Roasted over night? So has anyone have an idea of what they might have done to get this tri tip so tender? I have smoked many tris but they are not even close to this tender.

Define 'tender'. I've never had a tri-tip that wasn't tender but I would not equate it at all with pot roast which, to me, is cooked through till soft and edible. Was the tri cooked through, i.e., not at all pink?

It does sound like a braise but is most likely a well-injected or vac-marinated roast cooked in a steam-injected combi.
 
Ya, I was thinking that it was braised also. Then the juices were used to make the glaze.

Tender "soft or delicate in substance", It would almost not hold together when cut across the grain. Very little jaw muscle was needed after that.

Tri-tip with the texture of pot roast? Slow roasted overnight? Bourbon marinade? Think that I will pass on the Roadhouse. Tri-tip does not need to roast overnight. Maybe it was an imposter.
 
Bob, I think you should try it before knocking it. It was quite good. I don’t like what mushrooms are grown in but after I tried them I do like them.
