Tri-tip no fat cap?

I just got 2 Tri-tips (USDA Choice) from Costco. To my surprise there is no fat cap on either of the meats.

This is the first time I have bought Tri-tip from Costco. Anyone else find this as odd?
 
Are these the Tri-tips with Morton's marinade? If so, they're very good. Its hard to find good tri-tip in Florida for some odd reason.
 
Many Publix carry them. They tend to cut them into steaks so you have to ask for whole ones. They also tend to be overtrimmed like most of their meat.
 
No, I tend to stay away from Pre marinaded meat. Its funner to make your own I find.

The quality also is not as good... But all of the Tri-tips I have cooked in the past all have had a fat cap.

I normally slow cook fat side up, then at the very end sear the fat cap for great flavor.
 
I just tried the Morton' tritip from CostCo last night. No fat cap. Grilled it on medium.

Very tender, I think they overapplied the papaya. And it was salty to my taste, but my son loved it.

The only place I can get plain tri's is at Trader Joes.

Mike, Just ask one of the Butchers at Costco for a Cryo Vac pack of whole Tri-Tips. Here at my local Costco, they cut the tris into strips and they won't sell them whole other than if you buy the Whole Cryo Vac pack which has about 8 whole tris in it. Pricey yes, but it's an option for you.
 
bryan, thats interesting as my costco sells the whole ones trimmed and not trimmed. love the non trimmed ones cuz ya get a small fat cap that really adds to the cook and flavor.

George, I'm not a member of Costco, but borrow my friends card to go there once in a while. I had a lenghty diss with the one butchers last year about why they slice them. He said that that's the only way people will buy them, so it's the store policy to sell them sliced only, unless someone wants to buy the whole cryo pack. Makes no sense to me, and I tried and tried to talk him into just selling one or two but he would not do it.

I like the cap but not the whole cap. i usually trim off all but a very thin layer of the cap. That's all i really want and need, I get the fat flavor, without feeling very guilty after eating it. I guess it's a habit from serving my family so much. My parents and all their friends are all vietnamese, and always shy away from anything "rich" whether it be creamy, fatty etc. I mean it just doesn't sit well at all with them.

So I leave a tiny cap on to provide flavor, but not enough to bite into and think, ugh wth did I just eat?? Lol.

I bought my Tri-tips Whole and not marinated at Costco.. (not in strips) I paid 25 bucks for 2 whole Tri-tips.

I guess it depends on where you live. Tri-tip here in California is very popular and you can get one at Any Grocery store.

I normally get mine at Safeway with a nice fat cap. That’s why when I got mine at Costco this time with zero fat cap, I was kinda in shock.

I guess the trade-off is that Costco's meat is choice vs Select at most Safeway’s.
