Tri tip, more smashed burgers and some hot n fast shiners

Made a trip tip late last week, it came out excellent as always….got to keep this sliced thin and it stays nice n tender.
Cooked up a few perogies that I found up north hand made by a Ukrainian lady….they were called country cheese I believe.
I bought a few flavours but wanted to try these first…..odd I might say but they were indeed pretty tasty.

For lunch today I had 2 parts ground beef to 1 part ground pork…..for a twist….and the pork was mostly fat…..fatty fatty burgers.
I would probably go back to just beef, there wasn’t any improvement.
Made a triple for lunch tomorrow and the pics was my lunch today…6 patties not weighed, but I had about 1.25 pounds in total weight of protein.
Made a burger sauce…..2 time now in a week and got that all figured out I think.
I would never have thought but the ketchup plays a larger role in the sauce than I thought….I used more bbq sauce this time and it stood out as the dominant flavour….ketchup brings out the sweetness needed.
Half a small onion, cooks down a ton, used it all.
Anyway, this was a massive burger….so big I am okay with dinner taking longer tonight than I planned.

Made a ton of food today in prep for the work week…..
2 chicken breasts…..standard, nothing special.
A flank steak cut it in half for easier future use….tequila lime marinade……
Mini white potatoes with onion………
Pound of bacon, cooked some of it over charcoal for the ceaser salad tonight.
Making red beans and rice….my way…….getting close to being done.
Currently cooking beef shiner ribs, these are thin so going with some of the hot and fast ideas from the pros cooks on here.
Running about 350 on the performer, using hickory.
Would have gone slower but I didn’t plan well and started the chicken at 3….should have been noon…..
Ribs went on about 4:30……pretty late to start that kind of thing…it’s been 2 hours sitting at 165….doubt there will be much of a stall…..they really are thin.
Got a few pics but not of everything…..
Looks like that is it for now…should nail some pics of the ribs and probably just a ceaser salad tonight.

Rest of it goes with weekday cooks….lunches ect……going to be a taco night in there with the access chicken and the rice n beans will cover 2 meals….including taco………Wednesday??…can that be a thing?
Thinking about Shanghai…..ing a dish with red beans n rice with Cajun style shrimp and scallops…..we will see I have all ready to go.

triple smashie for the win, excellent!
 
Got them sitting at about 198 and somehow tricked the bbq to sit at 225…….so I am leaving it as long as I can for colour and will pull them at 203 or more….the tenderness is what makes me nervous……this is where they are now, wil pull and put them in the cooler soon.

Forgot to post the final pics last night.
Sat them in foil and rested for a while….while they were not exactly like a big juicy thick beef rib they still ended up being tasty.
The rub was just Oakridge SPOGOS……

Used some of the weekend food to make dinner tonight…..
Crispy fried rice with red beans n veggies….
Seared shrimp, this dish was to die for.
I don’t say things like that often, it really was a hit.
Fresh ground finishing salt n pepper and a chili really set it off.
Ceaser salad was the side we didn’t eat it last night so it was eat it or toss it out….it was a hit for sure.
Bacon smoked last night…….
