Tri-Tip and Bellas

For dinner tonight.This is the second of the two I picked up from Dean L 3 weeks ago. Just look at the marbling on this one, Fantastic.

I'll be using Susie Q's and cooking over Hump Lump with some red oak. Cooking high heat on the lower grate, no water pan. Time to sidestep the rain drops and light some coals.

It's resting now and filling up the garage with a wonderful smell. I'm finding it hard to resist cutting it up.

Thanks Bud. Even though this one is cooked to med-well, it's still very tender, and so juicy. These Tris from J W Treuth are just fantastic. Sorry about the last pic, not too good. Had to take it with flash off, and with one hand, while the other one was holding the plate up high under the light.

Thanks Tom. You know when I opened the first a few weeks back, that thought came to mind. Then after seeing this one, I said there's no way this is a choice Tri. They are ungraded but the marbling is spectacular in the 2 I got from Treuth's. I have 10 more in the freezer from them. I'll keep making them and posting pics.

I took another one out of the freezer after tonights cook to vac seal, and wet age it in the beer fridge for 2 weeks. I'll take another one out of the fridge tomorrow for a Tri-Tip cook on Tuesday. Hoping all of them are marbled like the previous 2. We have a group case buy from Treuth's put together with some of the MD and NJ guys here on TVWBB. These Tris are really nice. Not quite as nice as Larry's Kobe ones, but they are up there.

Those look amazing. Care to share your price per lb? I've heard of some rediculous prices on Tri's.

Tom, When I ordered the 10 last week (11 days ago), he quoated me a price of $5.99lb. When I called on this past Tuesday to confirm my order was ready, and ask about the case buy, he said that they had gone up to $6.99lb. He said that he would give them to me for $5.99lb. since I was buying 10 of them. So far, seeing the high quality of the first 2, I would have no problem paying $6.99lb. for them. Granted, this price is way higher than you guys out there, but these things are hard to come by here.
 
With that level of marbling, I'd be willing to pay that much too. I haven't been to the fine, top end purveyors of meat in this area, but as far as major grocery store stuff goes, around here, you're talking on average $4 lb, for choice.

So, I'd say you got a heck of a deal. Nice he kept up his end too.
 
man, that looks tasty i need to head back up there soon (you've also just cooked my favorite meal - tri and portobellos which is really killing me).

i would assume their tri's are all choice. i asked them about their prime meat a while ago - they said it all pretty much goes up to NYC, but you can special order it if you want. not sure if that's changed.

based on quality of the ny strips and ribeyes i've picked up from there, i probably wouldn't bother with their prime unless it was a special occasion. their choice meat puts some places' prime to shame and i think the prices are quite reasonable given the quality (not to mention supporting a local business that actually deserves it is always nice). they must have some mutant strain of cow that produces meat somewhere between choice and prime. i dig their sausage too.
 
Did another one tonight. I switched up the rub this time, knowing full well everytime I have not used the Susie Q's I was dissapointed.

Well tonight was no exception. I used Dizzy Pig Cow Lick and... Well the meat was good and juicy, just wasn't thrilled with the seasoning on the Tri. Back to Susie from here on out, love that stuff. No pics, it's getting old I know.

Bryan, I'll have to look for that one, I just started using Dizzy Pig, and have enjoyed it. I have their salt free dizzy dust, and one of their spicy beef rubs that contain a bit of coffee, and a few other oddballs.

Is Susie Q's available in any national stores?

Tom, don't get me wrong, I like the cow lick, just not on the Tri. I'm so hung up on the Susie Q's for tri. Here's a link for you. I don't know your area code, but there's a store locator on the site. Susie Q's link
