Tostadas!

It all started when I made these thighs. I marinated them in Kinders Original and they came out delish! AJ turned me on to the Kinders garlic marinade which was great, so I thought I would give the original a try. We had a traditional meal with them.


The next day I shredded the lefties and put it on tostada shells with some refritos and MJ. Then into the Performer to bake for around 20 minutes at 350.


Here are the results. I topped them with lettuce, avacado, cilantro, fresh salsa de molcajet'e and orange sauce.


Then the next day, I thought I would see if the Smokey Joe could produce the same results in case I decided to take it out of town and make them on it. There are only beans on one in this picture because I ran out. I almost didn't miss them. Almost.

Still around 350. I just closed the lid and it was at 300 until it came back up to temp.


Same awesome results!


Man were they good! I wish I had a couple more right now! That was the last of the chicken. Next time I will be making them with shrimp. The cool thing about these is you can top them with anything you like and have great results like a pizza.

Fantastic looking tostadas Shaun!!. I really like the Kinders BBQ sauce but never tried their marinade. If I can find it I will have to give it a try.
 
Thanks for the kind words everyone! I have been buying SarayoI really like it and keep several bottles on hand. It's become my favorite condiment and I use it on nearly everything.

John, Kinders is on sale right now for $2.99. I highly recommend the garlic, but the regular takes no back seat to it. I picked up three more today.
 
Funny thing, I just noticed I forgot to add the pictures of the thighs cooking. Here it is and I also added it in the post up top.

Really good idea, Shaun. Since you said "tostada shells", can I assume these were pre-fried corn tortillas that you purchased? Or did you prepare them yourself somehow?

Either way, I gotta try this -- already have the smoked thighs.

I better hury then, you can buy these at most stores especially mexican ones. they come in a package like regular tortillas. Please share the results and have fun!

, but I ended up shoving those thighs in the freezer. I suddenly realized I have to grill a half standing rib tomorrow, so the thighs take a back seat. But I will get those tostada shells and enjoy them later in the week.

I fixed those tostadas yesterday, Shaun. They were a real treat! Again, many thanks for the great suggestion. It's marvelous how good some leftover chicken with some spices and other leftovers (in my case, black beans and salsa verde) can be. Optional add-ons like lettuce, tomato, guacamole, cheese, sour cream, etc. can make each one a different palate pleaser.
