Tomatillo Chipotle Salsa

My son makes one very similar but he adds a red onion as a sweetener. His last time he roasted them in the Pellet Grill at 500, but I think it's better just roasted in the over.

Gotta have good Salsa
Tomatillo Chipotle Salsa
  • ▢6 tomatillos, husked, roasted and rinsed
  • ▢4 chipotles in adobo sauce
  • ▢4 large garlic cloves, peeled and roasted
  • ▢¼ teaspoon salt

Combine ingredients in a food processor or blender and blend to desired consistency

Will have to try it when my tomatillos start to ripen. They're doing great, despite the long harsh Winter apparently causing a lack of bees around here. I've been pollenating with a little brush every couple of days and have some nice lanterns forming.
