Tony,
Just wondering. You say you inverted the ribs. I haven't been doing that, maybe I should. What does doing that do for you? I'm not questioning your infinite wisdom, just looking for added information. Looks good.

i don't know where you have to, i have read it in a few recipes that tell you to use a rib rack. i did notice that when i invert them the sides that were facing down are not pulled back from the end of the bone like the ones facing up are. so i just invert halfway through t he projected cooking time. it may not be doing anything, but i like to think it does

Gotcha. I think I'll try that the next time I use a rib rack. Maybe the ribs cook more evenly that way. Thanks. Enjoy dinner.

i just used a jerky gun, 2 pounds of lean ground beef and some nesco jerky seasoning.the hot-spicy and teriyaki mixed together. it's a good combonation of sweet and heat. oh, and i did them in my nesco dehydrator.

here the ribs are resting, the top 2 use the ranchhouse recipe bbq sauce ot of weber's charcoal grilling book. the bottom rack has sonny's chipotle smoking sauce.
