Todays Chuck Roast...1st try.

Pretty much Larry Wolfes "Pepper Stout" with a few ingredient changes. Was darn tasty. Was never a fan of chuck in pot roast but I figured I give it a shot for this. I added red pepper, and used green onions instead of red. Also, I went with beef broth instead of beer. As you can see by the pics I like the veggies chopped pretty fine. Something about chomping into chunks of peppers and onions gives me the willies...lol. Go figure..lol. Here are some picks from today.

Went about 4 hours at 250. Only got to about 155-160. I said the **** with it and threw it in the pan. Then I had trouble getting up to 350. Did a big stir of the coals,. Still no luck, got to about 325, ended up taking the water pan out. Temp shot right up. Spent about 2.5 hours in the pan foiled, then it pretty much just fell apart. Then about 20 min. unfoiled. Meat was as tender as pork. I was pleasantly surprised.

Wow great looking pulled chuck there Bill, i can taste that pulled chuck inside a homemade corn tortilla mmm mmmm gd.

Thanks...Was planning to go that route, soft tacos, are they the same thing? I have no idea...lol. Well what ever they are they won't be homemade, that's for sure...lol. But ended up getting rolls. I have plenty left though.
 
That looks excellent. My next chuck, I'm gonna try that. I always have tortilla with any beef/chicken I eat and that looks perfect!!

and for me for some reason, cooks always take longer than expected. Usually go full bore last hour or two with either all vents open or big crack in the front door too get the heat up and finish the cook.

Thanks...Pretty much why I did it. Didn't think I was going to like it actually. Since I generally don't like chuck roast. But wanted to try something new. Figured my son would eat it and I would be taking the rest to work. That's not happening....lol. Going to have leftovers in soft tortillas today.

Well just had the leftovers in burrito tortillas. It may be the best thing that that ever came out of my WSM. It seems Larry recipe has the perfect balance of everything. As with anything bbq...It's even better the second day!
 
Well I was going to try my hand at beef ribs next but after seeing these pics I might have to go with this. I'll use the beer though mmmmmmmmmmm beer.
