To Freeze or not to freeze for 3 days later?


 
There's a big dinner at work on Wed, and I'm smoking a couple of Briskets this weekend. I already trimmed them an they're in the fridge. Tomorrow is suppose to have a chance of rain, but Sunday is suppose to be Sunny. I'm not sure yet which day I'll smoke yet.

So either Sat or Sun night I'm going to have to finished and cut briskets and I'm going to place the meat in larg Foodsaver vacu-seal bags to take up to work on Wed.

Should I throw the Foodsaver bags in the freezer or just leave 'em in the fridge?

Don't think I would freeze for the 3 days if I had things vac packed. But then that's just me.

I would slice cold, vacuum seal and freeze. Take the bags out of the freezer the night before and into the fridge to partially thaw. No reason not to freeze and it will make your leftovers at the end of the week better and safer! If there are any leftovers!
