Thanks for the info. While the bird was great I will try it with the full brine solution next time. I didn't want to chance it w/ 12 people coming over and my first smoked turkey experiment.
I did have a 23lb fried turkey to go with it so it would not have been a complete disaster but I have a reputation to uphold! /infopop/emoticons/icon_smile.gif
