Okay, first time giving this a try. I've done jerky a few times, and it's turned out great. So I decided to do the same setup. Snake method with pecan for smoke.
Used about 10-12 lit coals.

Smoke like the wind!

As of now it been a little over 50min and I'm setting at 154°. I'm going to try to keep it between 150-180°. Wish me luck! More pix to come.

I am curious as to how these turn out. I read once that it takes 10 lbs of jalapeños to make 1 lb of chipotle peppers. No wonder they are so expensive!!!

Well after about 8 or so hours here's what I got.

The ones on the left are done ,but the ones on the right I'll have to put in the dehydrator to finish them off. Crushed up the done ones.

Put some on dinner tonight, and it kicked it up a notch!

How did they taste? Would you make them again? Just curious as I have thought about making my own numerous times.
They tasted pretty good. Nice heat with a little bit of smokey flavor. It would be great in home made rubs, or just add it to any dish. Worth trying again I think.

Looks awesome. I grill jalapenos often, but never tried to make chipotles yet - looks like that needs to be added to the to-do list.
