Got me a pork shoulder and a pork loin roast today to tryout my new 22 wsm. I am going to use Chris Lilly's rub, Kingfords blue and Jack Daniels wood chips as my fuel. The Maverick is programed ready to go. Water pan is foiled, going dry no water, oh I forgot I am drinking a few beers to pass the time until cook time. Its 8:40 pm right now and will put them on at 10pm. The test meat has been out of the frig for a hour now and will put on the rub in 20 minutes our so and drink a few more

your Jack Daniels wood chips are probably burnt to nothing by now.... should add more...butt then, it's kinda too late...
hope the butt turns out great!
 
I was thinking about that and put most of them on top of the charcoal on the outside close to the ring, hope it works out?? I never have used the JD chips. We will see said the blind man
 
After 15 minutes the temp is showing 262 right now and is going up slowly, I have two bottom vents closed and one opened at 25 percent, well its up to 266 now lol hope it settles down in a bit?
 
close all the bottom vents if need be... butt keep the top completely open.
