Thursday nite clean out the fridge meatloaf

Had some hamburger and sweet italian sausage that I needed to use or freeze, so decided on meatloaf. Mixed together with an egg, panko breadcrumbs, onion, green pepper, 1/4 cup of Pico de Gallo, ketchup and for a little kick a large tablespoon of sriracha. Once blended together, I split the loaf in half and flattened each half. I layered one half with colby jack and pepperjack cheese and fresh mushrooms. Put both halves together and shaped into a loaf and dusted it with some Penzey's adobo. Think I may have used a tad too much cheese..

Onto the grill with a few chunks of cherry wood.

Glazed with a mixture of sriracha, yoshidas, worchestire and mustard.

Meatloaf done, a little bit more glaze and going to rest for awhile.

Carrots coated with some leftover orange marmalade sriracha sauce and onto the grill.

Plated with some leftover noodles. Getting the fridge ready for this weekend cook.

Got to admit really starting to like the sriracha sauce. Just enough kick to enhance the food without being an overpowering heat. Even my wife who is kinda of wimpy with spicy food (looks over shoulder to see if she is watching

That looks so good! I can't even remember the last time I had meatloaf, but I know that I never grilled or smoked it. I'm obviously missing out on something good.

On this one, I ? the "tad too much cheese" as it oozes out... AWESOME! I'll wager thousands it smelled SENSATIONAL!

Outstanding loaf! I tried using straight sriracha as a glaze during the height of my sriracha addiction, but it was a bit much. 50/50 with BBQ sauce is fantastic, but it's very messy and we usually eat more of the loaf for sandwiches than dinner.
 
Thanks everyone for your kind comments. Jim, it definitely smelled sensational and Bob the flavors blended real well together! Jon, I probably could have gone straight sriracha, but I would be the only one eating the meatloaf, which may not be a BAD thing..

, so that is why I just added the yoshida's, sriracha, worchestire and mustard until it had a good "sweet tangy heat" taste.
 
I wish that this would happen when I clean out my fridge. Not being cheeky here, but I love being able to make "chicken salad out of chicken s**t!".
