Three recipes from Weber............

So yesterday we got a new refrigerator. No I was not happy about this. Emptying it out revealed a surplus of boneless chicken breasts. These are one of Nancy’s favorites so I’m not allowed to get mad at the fact the freezer was filled with them. :) I decided to try to cut down on the inventory. Into the Weber Big Book I went and came up with Margarita Chicken Breasts. Basically this is a lime/tequila marinade. We needed a couple of side dishes so I prepared Yukon Gold taters with a sauce HEAVY on thyme. Something else was needed so it ended up as asparagus with an orange/mayo sauce. This was served on top of grilled prosciutto. The plated dish leaves a lot to be desired but it was late and we were hungry.

That plated dish looks just fine to me. Who needs all that fancy-shmancy stuff anyways. How long did you marinade the chicken ?

Bob we had some delays so instead of following the recipe, I marinated for almost five hours. It tasted pretty good.

That looks pretty tasty. I kept thinking there would be three meals from your title, then it finally dawned on me the sides were also Weber recipes.
