just a quick question or two.

I am going to be cooking 2 5 pound briskets this weekend. Since I plan to cook them at the same time when should I plan on them being finished. Will they cook as if I were cooking a single 5 pound brisket since its 2 separate cuts or will it take twice as long like I am cooking one 10 pound brisket?

They will usually cook the same amount of time how ever no two pieces of meat seem to cook the same so there could be a little difference during the stall, give yourself a little extra time, brisket will hold nicely for several hours just let them rest for 15-20 minutes to stop the cooking process then wrap in foil and into a cooler.
 
Just did one of these. As a general rule they cooked as if they were two separate pieces of meat.

One thing to note. If you put them in the pit cold straight from the fridge you now have double the amount of meat at 38* or thereabouts. Will take the pit a little longer to get back up to temp.
