I rarely post here but lurk here often. the information here is phenomenal. For years I used a basic smoker with an offset firebox...a cheapo but good to learn on. I got my WSM 22 last October and love it. There is no doubt that my base skill level has improved since purchasing the WSM and using this site. Today I did two 9lb pork butts on the smoker...Kingsford Competition briquets and a few chunks of pecan. I took them off the grill after 10 hours. The internal temp was dead on 190. The smoke ring was perhaps the most beautiful thing I have ever seen outside of maybe the birth of my children<G>. It almost pulled itself it was so tender. Far and away the best I have ever done. I just wanted to brag and to thank the folks who post all the great info here. It paid off for me!!!! BTW wife is out of town for a marathon and has the camera so unfortunately no pics of perfection!!!<G>

So...you're making pulled pork when your wife is away running a marathon. Did you get permission or this a secret indulgence from an otherwise healthy diet? C'mon, you can tell us the truth.

Ah, but remember, Michelangelo painted the Sistine Chapel while laying on his back! Unless you took advantage of your wife;'s trip to drop a case of 24, then...
