Thick cut pork chops

Just a quick cook from last night. Found some really thick chops at the grocery store.


Brined for 10 hours while I was at work and sprinkled with McCormick's Mesquite seasoning. (I tried to use the lighter as a reference to show the thickness since I didn't have a ruler handy)


On the grill half way through the sear.


and plated with some garlic mashed, grilled bread and fresh Jersey corn on the cob


I loved the chops, but the corn is the star of the show in my opinion. I could eat it every night.

Very nice! Fresh corn already...that just sounds like madness to me. Guess our growing season is a little different up here

That's what I was told at the Stop and Shop I go to, but who knows where they get it..

...What grill did you cook them on? Doesn't look like
any of my Webers.
Nah, not a Weber. I cooked these on my crappy barrel grill I picked up at Target a few years back for 50 bucks.

...How do you cook the corn? Any Tips?
For these, I just cooked them on the stovetop. I was always told "boil the water, not the corn". So just get a pot boiling, turn off the heat, throw in the cobs and cover it for at least 20 minutes. But they can sit in there for a while and won't over cook.

I also like to grill corn. The way I do it is to peel back the husk, smother it in salt and butter, and then reapply the husk and grill over direct heat. Gotta be careful of flare ups when the butter melts though...
