thermocouple connector sourcing question

Because thermocouple connectors are specialized things. You're not supposed to use spade plugs unless the spades are the exact same temperature as the AD8495 chip is (for proper cold junction compensation). I like to keep everything as off the shelf as possible when it comes to cabling (although the fan is a special thing because blowers aren't really standardized). Plugging in individual spades is annoying because there is two of them, and they have a polarity so you have to plug them in the right way, and also what connector expects a spade terminal? One with a screws would be really user unfriendly. Headphone jack means you now have to always build a connector, which means hassle, some cost, and also it's not the right connector to use.

One could also get any connector they want and glue it to the PCB and run two wires to the +/- connections, there's plenty of flat open space there.

i now found that. 86c with free shipping and you can just cut the connector off and dispose the sensor :)

Typically those yellow connectors come apart by removing the screws, then inside there are screw terminals to attach the wires from the TC. So you shouldn't have to cut the cable, just disassemble the unit to connect a different TC, if the plug is all that you are after...
