The players: dried cranberries, Riesling to rehydrate the berries, celery, onion, Granny Smith apple and some Thanksgiving-type herbs.

I cut a pocket in the tenderloin and filled it with the stuffing. Seasoned the outside with some s&p, rosemary, and thyme. I grilled it indirect with a chunk of apple for the smoke. It turned out a lot Bette than I was expecting.
