The Song Remains the Same

Friends, I know such words have been expressed many times, but I need to say something to get it off my mind.

Last night, I started a minion method cook with a full ring of K, 3 chunks of pecan and 3 of apple, all fairly small, and 20 lit coals on top. The temp outside was in 70's and no wind or rain in sight. I gave it about 10 minutes to get the temp up when I thought, "What's the point of all this? I have a PitMinder! Start that bad boy up, put on the three butts, and let 'er rip!" So I did.

I had 3 butts, all right around 4 lbs each, for a small gathering for my 3 kids unity birthday party today. I went with the naked method again (a slathering of mustard and a generous coating of salt and fresh ground pepper). I dialed in the PM to 250ish, and within 20 minutes with no effort things were at 260. I slept great.

I got up at 6 today just to check things. The biggest one was at 182 and the smaller ones were falling apart already. I foiled them all individually, put in some simple vinegar sauce, and left them in until 8, when the big boy was at 202. I pulled them, shredded them, packed them in an insulated container, added more sauce, and went to the party.

With buns, chips, cole slaw, the q and sauce, we swam, ate hardily, and celebrated the birthdays of 5, 7 and 9. I had a ball, and I sing this same song to say not much of this would have been possible without the incredible WSM and the amazingly simple PitMinder. I don't do many overnights, but man am I thankful for that little device and this great smoker.

There, I sang an old song. I hope all your cooking was great this weekend. When everyone ate everything in sight today and I heard many times, "That was the best q I've ever had. I can't get anything like that in any restaurant." I knew every penny and minute was worth it. Thanks for tolerating my poor singing voice. Good evening.

T Bounds!, ... buddy, you sang it perfectly!

I love that tune! Glad it all worked out. Fun with friends and family is always the real reason for BBQ.
