However, I currently have aluminum tube running through 2 of the upper strap holes (first and second to the right of access door) for my guage therm and meat probes. They are held on both sides with C clips. I need to find something more robust here.

I think it could work but if the horizontal part of the L brackets stick out too far, depending where they are positioned you may not be able to or it may be difficult to tip the racks enough to get them in and out.
Instead of adding L brackets I bought two extra WSM bottom grates and opted for the Campbells soup cans. I use three cans. I stand the cans up to add one grate. If I lay them down I can fit both extra grates for a total of four.
