I have started the TQ brisket test that I discussed with a few of you a while back. I've TQ'ed half of a nice 7 lb CAB flat, leaving the other half natural, in order to more clearly see the effects of TQ on a smoke ring with ALL other things being held the same. The ultimate goal of this test is to produce a single slice of brisket that shows one end with the "natural" smoke ring produced by the cook, and the other will show the "fake" smoke ring, or cure ring, that is enhanced by the use of Tenderquick. I undertook this test strictly for my own information and education (okay, and fun, too). I take my CBJ duties seriously, and this is one way that I am continuing my education to that goal. What? No responses? Thanks Keri - I found this test very interesting.
Plus, I was drinking some water and almost spewed when I saw those enormous... um. Lemons.
 
That was interesting to see the difference in the two halves.

The chickens are "just wrong". Actually I could see doing that when you have a lot of beer buddies coming over. Just for laughs.
