Just what I've been looking for, details on the belly cook please.

The guy I was cooking with did the brine. Honey, brown sugar, salt and water. I cooked it real slow indirect with 2 burners on low and the middle one off. Use a drip pan! (I did not) otherwise the rendered fat will make a mess and flare up when its time to cook everything else.

After it was off, it rested and was tossed in a mixture of some crazy brand (I can't remember... it was in my pantry for a while) of spicy BBQ sauce. The stuff was HOT... too spicy to be a crowd pleaser, so we poured a little hot water into a 1/4 full jar of peach jam and added it. Couppla slices per sandwich and topped with a asian inspired "vinegary" slaw.

Nothing about that day is too clear to me now. I hope that helped. :p

Cheap silver rum poured over pineapple. Let it sit for at least a week. Make sure that no fruit is exposed at the top. Last year we also added pomegranate seeds as well. I think it was better last year. The girls were mixing it with coconut seltzer... kind of a fizzy pina colada thing going on.

I wish I had posted all of it... like I said, I was all over the place. There was more, but I was a bit hammered to get to it. It was a second thought to even post this. Glad that everyone enjoyed it!

Looks like a Friday night drink, with a two day recovery period before the Monday alarm clock goes off.;)
