We have a neighborhood Pot Luck Get-Together this afternoon @ 5:00 pm. My contribution will be two Pork Butts, one ~ 10 lbs & the other ~ 11 lbs. I debated about pulled vs sliced & had intentions of going with sliced. Here are the twins getting happy starting about 10:30 pm last night:

I used a ring full of Kingsford with some Apple wood chunks. I foiled the water pan, no water, clay saucer. I pulled out my toys for added measure & connected my IQ110 & Maverick up to the WSM:

Work up this morning to rock steady temps with visions of a Saints victory over the Jets dancing in my head:

I wasn't sure about target temp for sliced pork so I was shooting for ~185 degrees. I called a BBQ buddy of mine who told me 175 degrees should be my target for sliced. Unfortunately, this was about the time my Maverick indicated a temp of 187 degrees. Popped the lid on my WSM to see what the Pork Gods had gifted me:

As I pulled them off the food grate, I felt the porky goodness give way a bit which makes me feel as though I will be changing the menu to either pulled or chopped. Even though it wasn't my original Game Plan, it's hard to feel bad about something that looked, smelled & tasted so good:

I let them cool to ~ 170 degrees uncovered @ room temperature. Then I covered them tightly in foil & they are having a Double-Butt Boogie in the oven @ 170 degrees until the party!
