I haven't done it but my mum would make pea and ham soup and put the ham bone in with it to cook for extra flavor. Plus there's marrow in the ham hock bone. When you talk about making a crown of bones the first things I thought of was the beginning of the Lord of the Rings: the Fellowship of the Ring when Sauron loses the ring. THAT's how I would expect you to look wearing a bone crown ;-)
