Thawing

Sorry if this is in the wrong section. It didn't seem to belong in the Recipe section, but it's not a perfect fit here either.

Anyhow, what is the proper way to thaw meat? I'm particularly interested in chicken because that is the only meat I'm really ok with freezing.

As an example, I have 4 packages of Thighs from Costco that were frozen solid as of 7pm last night when I put them into the fridge. I checked this morning and they're not much better.

Should I have put them in the fridge sooner? Not worry about it and just go as is tonight? Left them in the sink all day like I used to?

If I know we are doing chicken days in advance we just remove from freezer for a couple hours to remove the chill then fridge, then wash off in the sink, dry and season and leave out while the grill is getting ready.

If it is a last minute deal we submerge in water till thawed out then wash, season and let sit till grilling time.

I tend to do what Glenn does. From the freezer to the counter for a while, then into the fridge. I keep my fridge at about 34 degrees, so if I go straight from the freezer, it takes days to thaw a BSB. If it's a last minute deal, I'll use the dreaded microwave defroster and lower my expectations accordingly.
 
A small cooler with the meat wrapped in newspaper works for me.
An ice pack or two may be needed.

Of course it depends on the size package of meat, but usually the evening before or morning of, works well.
I may remove it to the counter, still wrapped, if cook time is near and it's still too frozen.
 
The best way if u have time must be in the fridge.

If ur short on time i always put em a sealed bag(vacuum if possible)

And drop the bag in COLD water(in the sink or a big bowl)

According to Alton Brown, Wolfgast is closest to correct.

Submerge in cold water, change water every 30 minutes till thawed.
 
Thanks guys. Really appreciate all of your responses. I've had the frozen thighs in the fridge for almost 24hrs now and they could probably pass for having just come out of the freezer. In other words....frozen!

In the future I will plan to fridge 3 days in advance. And/or try the submersion in water option.
